As we are in the process of updating our contracts of employment should we, in light of the Stringer case, include a reference to a person's entitlement to statutory annual leave in respect of periods of absence?

No, there is no requirement to specifically confirm that annual leave continues to accrue during periods of sick leave, and provided that there is nothing to the contrary in the contracts of employment, then we would not see any need to specify this.
